A simple and hearty ground beef hobo casserole that’s easy to prepare and perfect for a comforting meal.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1 cup milk
- 2 cups frozen mixed vegetables
- 2 cups shredded cheddar cheese
- 4 cups frozen hash browns
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, brown the ground beef with onion and garlic. Drain excess fat.
- Stir in the cream of mushroom soup, milk, mixed vegetables, salt, and pepper. Mix well.
- Spread the mixture into a greased 9×13 inch baking dish.
- Top with shredded cheddar cheese and evenly distribute the hash browns over the top.
- Bake for 45-50 minutes or until the hash browns are golden and the casserole is bubbling.
- Let it cool for 5 minutes before serving.
Notes
- You can substitute cream of chicken soup for cream of mushroom soup.
- Add your favorite seasonings for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
