  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup grated apple
  • 1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk applesauce, honey, egg, and vanilla.
  4. Combine wet and dry ingredients. Fold in grated apple and walnuts.
