Ingredients
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 egg
- 1 tsp vanilla extract
- 1 cup grated apple
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, oats, baking powder, baking soda, cinnamon, and salt.
- In another bowl, whisk applesauce, honey, egg, and vanilla.
- Combine wet and dry ingredients. Fold in grated apple and walnuts.
- Divide batter into muffin cups. Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Store in an airtight container for up to 3 days.
- Replace walnuts with raisins if preferred.
