Description

Herb zucchini stuffed jumbo shells are a flavorful and nutritious dish perfect for a family dinner or special occasion. The combination of fresh herbs, zucchini, and cheese stuffed into pasta shells creates a satisfying meal.


Ingredients

  • 12 jumbo pasta shells
  • 1 medium zucchini, grated
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions until al dente. Drain and set aside.
  3. In a mixing bowl, combine the grated zucchini, ricotta cheese, Parmesan cheese, basil, parsley, garlic, salt, and pepper.
  4. Stuff each jumbo shell with the zucchini and cheese mixture.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Arrange the stuffed shells in the baking dish and top with the remaining marinara sauce and shredded mozzarella cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
