Description
A healthy twist on classic banana bread, packed with protein for a nutritious snack or breakfast.
Ingredients
- 2 ripe bananas, mashed
- 2 eggs
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 cup Greek yogurt
- 1.5 cups oat flour
- 1 scoop (30g) vanilla protein powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a bowl, mix mashed bananas, eggs, honey, and vanilla.
- Stir in Greek yogurt until smooth.
- Add oat flour, protein powder, baking soda, cinnamon, and salt. Mix well.
- Pour batter into the prepared pan and bake for 40-45 minutes.
- Let cool before slicing.
Notes
- Use very ripe bananas for natural sweetness.
- For extra texture, add chopped nuts or dark chocolate chips.
- Store in an airtight container for up to 5 days.
