Ingredients
- 4 large eggs
- 1/4 cup shredded cheddar cheese
- 2 small flour tortillas
- 1/4 cup diced bell peppers
- 2 tbsp diced onions
- 1 tbsp butter
- Salt and pepper to taste
- Optional toppings: salsa, avocado, hot sauce
Instructions
- Heat a non-stick skillet over medium heat and melt the butter.
- Add diced onions and bell peppers, sauté for 2-3 minutes until softened.
- Whisk the eggs in a bowl, then pour into the skillet with the vegetables.
- Stir occasionally until eggs are scrambled and fully cooked, about 3-4 minutes.
- Warm the tortillas in a dry pan or microwave for 20 seconds.
- Divide the scrambled eggs between the tortillas, top with cheese and any additional toppings.
- Fold and serve immediately.
