Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix chicken with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
  3. Arrange chicken and vegetables on a large baking sheet.
  4. Bake for 25-30 minutes until chicken reaches 165°F (74°C) and vegetables are tender.
  5. Serve hot.
