Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lb baby potatoes, halved
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, mix chicken with olive oil, rosemary, thyme, garlic powder, salt, and pepper.
- Arrange chicken and vegetables on a large baking sheet.
- Bake for 25-30 minutes until chicken reaches 165°F (74°C) and vegetables are tender.
- Serve hot.
