Description
A comforting Italian wedding soup with tender parmesan meatballs and fresh vegetables in a rich broth.
Ingredients
- 1 lb ground beef
- 1/2 cup grated parmesan cheese
- 1/4 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 cups chicken broth
- 2 cups chopped spinach
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup small pasta
Instructions
- Mix ground beef, parmesan, breadcrumbs, egg, garlic powder, oregano, salt, and pepper in a bowl.
- Shape into small meatballs (about 1-inch diameter).
- Bring chicken broth to a boil in a large pot.
- Add meatballs and simmer for 10 minutes.
- Stir in spinach, carrots, celery, and pasta.
- Cook for another 10 minutes or until pasta is tender.
- Serve hot with extra parmesan if desired.
Notes
- You can use ground turkey instead of beef.
- Freeze extra meatballs for later use.
- Add more broth if soup thickens too much.
