These lemon oatmeal crumble bars combine a tangy lemon filling with a buttery oat crust. Perfect for a snack or dessert.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup unsalted butter, melted
- 1 large egg yolk
- 1 tsp vanilla extract
- 1 cup lemon curd (store-bought or homemade)
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper.
- In a bowl, mix flour, oats, sugars, baking powder, and salt.
- Add melted butter, egg yolk, and vanilla. Stir until crumbly.
- Press 2/3 of the mixture into the pan to form the crust.
- Spread lemon curd evenly over the crust.
- Sprinkle the remaining crumble mixture on top.
- Bake for 25-30 minutes or until golden brown.
- Cool completely before cutting into bars.
