Description
A creamy and hearty soup made with baked potatoes, cheese, bacon, and green onions for a comforting meal.
Ingredients
- 4 large baked potatoes, peeled and cubed
- 6 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup sour cream
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add cubed potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes until potatoes are soft.
- Use a potato masher to break down the potatoes slightly.
- Stir in heavy cream, sour cream, salt, and pepper.
- Simmer for another 5 minutes.
- Serve hot, topped with crumbled bacon, shredded cheese, and chopped green onions.
Notes
- For a thicker soup, mash more potatoes.
- Substitute turkey bacon for a lower-fat option.
- Store leftovers in the fridge for up to 3 days.
