Description

A creamy and hearty soup made with baked potatoes, cheese, bacon, and green onions for a comforting meal.


Ingredients

  • 4 large baked potatoes, peeled and cubed
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add cubed potatoes and chicken broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes until potatoes are soft.
  4. Use a potato masher to break down the potatoes slightly.
  5. Stir in heavy cream, sour cream, salt, and pepper.
  6. Simmer for another 5 minutes.
  7. Serve hot, topped with crumbled bacon, shredded cheese, and chopped green onions.

  • For a thicker soup, mash more potatoes.
