Description

A creamy and hearty soup loaded with broccoli, cheese, and potatoes for a comforting meal.


Ingredients

  • 2 cups broccoli, chopped
  • 3 medium potatoes, diced
  • 1 cup cheddar cheese, shredded
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté until soft.
  3. Add diced potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer for 10 minutes.
  5. Add chopped broccoli and cook for another 5 minutes.
  6. Stir in heavy cream and shredded cheddar cheese until melted.
  7. Season with salt and black pepper.
  8. Serve hot.

Notes

  • For extra creaminess, blend half the soup before adding cheese.
  • Top with extra cheese or crumbled bacon if desired.
