Description
A creamy and hearty potato soup loaded with toppings like cheese, bacon, and green onions.
Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 2 green onions, sliced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add potatoes and chicken broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Mash some potatoes to thicken the soup.
- Stir in heavy cream, salt, and pepper.
- Simmer for 5 more minutes.
- Serve hot, topped with cheese, bacon, and green onions.

- Use russet potatoes for best texture.
- For a thicker soup, mash more potatoes.
