Ingredients
- 1 cup cooked quinoa
- 1 cup chickpeas, drained and rinsed
- 1 cup diced cucumber
- 1 cup shredded carrots
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 2 cups baby spinach
- 1/4 cup tahini dressing
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Cook quinoa according to package instructions. Let cool.
- In a small bowl, mix chickpeas with olive oil, lemon juice, salt, and pepper.
- Layer ingredients in a mason jar in this order: tahini dressing, quinoa, chickpeas, cucumber, carrots, tomatoes, avocado, and spinach.
- Seal the jar and refrigerate until ready to eat.
- When ready to eat, shake the jar to mix or pour into a bowl.
