Description
Delicious matcha cookie sandwiches filled with creamy vanilla frosting.
Ingredients
- 2 cups all-purpose flour
- 1 tbsp matcha powder
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup powdered sugar
- 2 tbsp milk
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk flour, matcha powder, baking powder, and salt.
- Cream butter and sugar until fluffy. Add egg and vanilla, mix well.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Scoop dough into small balls, place on baking sheet, and flatten slightly.
- Bake for 10-12 minutes. Cool completely.
- Mix powdered sugar and milk to make frosting. Spread between two cookies.
Notes
- Store in an airtight container for up to 3 days.
- Adjust matcha powder for stronger or milder flavor.
