Ingredients

  • 1 lb ground beef
  • 1 medium potato, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/4 cup raisins
  • 1/4 cup sliced green olives
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp vegetable oil
  • 1/2 cup beef broth


Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add onions and garlic, sauté until soft.
  3. Add ground beef, cook until browned.
  4. Stir in potatoes, tomatoes, raisins, olives, cumin, oregano, salt, and pepper.
  5. Pour in beef broth, cover, and simmer for 15-20 minutes until potatoes are tender.
  6. Uncover and cook for 5 more minutes to thicken the sauce.
  7. Serve warm with tortillas or rice.
