Description

A tasty twist on classic deviled eggs with flavors inspired by Mexican street corn.


Ingredients

  • 6 large eggs, hard-boiled and peeled
  • 1/4 cup mayonnaise
  • 1 tbsp sour cream
  • 1 tsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/4 cup crumbled cotija cheese
  • 2 tbsp chopped cilantro
  • Salt to taste


Instructions

  1. Slice the hard-boiled eggs in half lengthwise.
  2. Remove yolks and place them in a bowl.
  3. Mash yolks with mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
  4. Season with salt to taste.
  5. Spoon or pipe the filling back into the egg whites.
  6. Sprinkle with cotija cheese and cilantro.
  7. Serve chilled.
