Description

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • 12 mini corn tortillas
  • 1 tbsp olive oil
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush tortillas with olive oil and bake for 8-10 minutes until crisp.
  3. Mash beans with cumin and garlic powder in a bowl.
  4. Spread bean mixture on baked tortillas.
  5. Top with tomatoes, onion, and cilantro.
  6. Serve with lime wedges.
