Description
A creamy and refreshing mint chocolate chip ice cream made with cottage cheese for added protein.
Ingredients
- 2 cups cottage cheese
- 1/2 cup heavy cream
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 1/2 cup dark chocolate chips (chopped)
- Green food coloring (optional)
Instructions
- Blend cottage cheese, heavy cream, honey, vanilla extract, and peppermint extract until smooth.
- Add green food coloring if desired and blend again.
- Fold in chopped chocolate chips.
- Pour mixture into a freezer-safe container and freeze for at least 4 hours.
- Stir every hour for a creamier texture.
- Serve chilled.

- Use full-fat cottage cheese for best texture.
- Adjust sweetness to taste.
- For a dairy-free version, substitute with coconut cream.
