Ingredients
- 4 large carrots, grated
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1 clove garlic, minced
- 2 tbsp fresh parsley, chopped
- Salt to taste
Instructions
- Grate the carrots and place them in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, cumin, paprika, coriander, cayenne, garlic, and salt.
- Pour the dressing over the grated carrots and toss well.
- Let the salad sit for 10 minutes to absorb the flavors.
- Sprinkle with fresh parsley before serving.
