Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 12 corn tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups homemade red sauce
  • 1/4 cup chopped fresh cilantro


Instructions

  1. Preheat oven to 375°F.
  2. Brown the ground beef in a skillet over medium heat.
  3. Add onion, garlic, cumin, chili powder, and salt. Cook until onions soften.
  4. Warm tortillas to make them pliable.
  5. Fill each tortilla with beef mixture and cheese. Roll tightly.
  6. Place rolled tortillas in a baking dish.
  7. Pour red sauce over the enchiladas.
  8. Sprinkle remaining cheese on top.
