Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 12 corn tortillas
- 2 cups shredded cheddar cheese
- 2 cups homemade red sauce
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Brown the ground beef in a skillet over medium heat.
- Add onion, garlic, cumin, chili powder, and salt. Cook until onions soften.
- Warm tortillas to make them pliable.
- Fill each tortilla with beef mixture and cheese. Roll tightly.
- Place rolled tortillas in a baking dish.
- Pour red sauce over the enchiladas.
- Sprinkle remaining cheese on top.
- Bake for 20 minutes until bubbly.
- Garnish with cilantro before serving.
