Ingredients

  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 white onion
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 12 corn tortillas
  • 1 cup chopped cilantro
  • 1 lime, cut into wedges


Instructions

  1. Soak the dried chiles in hot water for 20 minutes.
  2. Blend the chiles, garlic, onion, and spices into a smooth paste.
  3. Cook the beef in a pot with the paste and beef broth for 3 hours.
