Description
A quick and easy one-pot creamy tomato pasta dish perfect for busy weeknights. Rich, flavorful, and ready in under 30 minutes.
Ingredients
- 8 oz (225g) pasta (penne or fettuccine)
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 can (14 oz/400g) diced tomatoes
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic and onion. Sauté until softened (2-3 minutes).
- Add diced tomatoes, heavy cream, vegetable broth, basil, oregano, red pepper flakes, salt, and pepper. Stir well.
- Add uncooked pasta and mix to coat it in the sauce.
- Bring to a simmer, cover, and cook for 12-15 minutes, stirring occasionally, until pasta is al dente.
- Remove from heat. Stir in Parmesan cheese.
- Garnish with fresh basil leaves before serving.
Notes
- Use any short pasta shape if penne or fettuccine is unavailable.
- Add cooked chicken or shrimp for extra protein.
- Store leftovers in an airtight container for up to 3 days.
