Description

A refreshing and easy-to-make orzo salad served in individual cups for a perfect appetizer or light meal.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, and red onion.
  3. Add olive oil, lemon juice, oregano, salt, and pepper. Toss gently.
  4. Fold in crumbled feta cheese.
  5. Spoon the salad into small cups or bowls and serve chilled.
