Description
A simple, flavorful dish combining orzo pasta with roasted vegetables and crumbled feta cheese.
Ingredients
- 1 cup orzo pasta
- 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
- 1/2 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss vegetables with olive oil, oregano, salt, and pepper. Spread on a baking sheet.
- Roast vegetables for 20-25 minutes until tender.
- Cook orzo according to package instructions. Drain.
- Mix roasted vegetables with orzo.
- Top with crumbled feta before serving.
