Description

A simple, flavorful dish combining orzo pasta with roasted vegetables and crumbled feta cheese.


Ingredients

  • 1 cup orzo pasta
  • 2 cups mixed vegetables (zucchini, bell peppers, cherry tomatoes)
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with olive oil, oregano, salt, and pepper. Spread on a baking sheet.
  3. Roast vegetables for 20-25 minutes until tender.
  4. Cook orzo according to package instructions. Drain.
  5. Mix roasted vegetables with orzo.
  6. Top with crumbled feta before serving.
