Ingredients
- 1/2 cup rolled oats
- 1 cup water or vegetable broth
- 1/4 cup diced tomatoes
- 1/4 cup chopped spinach
- 1 tbsp grated cheese
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- Combine oats and water or broth in a jar or bowl.
- Add diced tomatoes, chopped spinach, and olive oil.
- Stir well, cover, and refrigerate overnight.
- In the morning, stir again and microwave for 1-2 minutes if desired.
- Top with grated cheese and season with salt and pepper.
