Description
A moist and flavorful cake combining the nutty taste of pistachios with the tropical sweetness of pineapple.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup crushed pineapple, drained
- 1/2 cup shelled pistachios, finely chopped
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a bowl, mix flour, baking powder, and salt.
- In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in vanilla.
- Alternately add flour mixture and milk to the butter mixture, blending well.
- Fold in crushed pineapple and chopped pistachios.
- Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
- Use fresh pineapple for the best flavor.
- Toast the pistachios lightly for extra crunch.
- Dust with powdered sugar before serving if desired.
