Description
A creamy and comforting soup made with potatoes, broccoli, and cheddar cheese.
Ingredients
- 2 cups diced potatoes
- 2 cups chopped broccoli
- 1 cup shredded cheddar cheese
- 4 cups vegetable broth
- 1 cup milk
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a pot over medium heat.
- Add onion and garlic, cook until soft.
- Add potatoes and broth, simmer for 15 minutes.
- Add broccoli, cook for 5 more minutes.
- Stir in milk and cheese until melted.
- Season with salt and pepper.
- Serve hot.
