Description

Ingredients

  • 2 cups diced potatoes
  • 2 cups chopped broccoli
  • 1 cup shredded cheddar cheese
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Melt butter in a pot over medium heat.
  2. Add onion and garlic, cook until soft.
  3. Add potatoes and broth, simmer for 15 minutes.
  4. Add broccoli, cook for 5 more minutes.
  5. Stir in milk and cheese until melted.
