A protein-packed cookie made with chickpeas for a healthy and delicious snack.
Ingredients
- 1 cup cooked chickpeas (mashed)
- 1/4 cup peanut butter
- 1/4 cup honey
- 1 scoop vanilla protein powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup dark chocolate chips
Instructions
- Preheat oven to 350°F (175°C).
- Combine mashed chickpeas, peanut butter, and honey in a bowl.
- Add protein powder, cinnamon, and salt. Mix well.
- Fold in chocolate chips.
- Form dough into small balls and flatten onto a baking sheet.
- Bake for 12-15 minutes or until edges are golden.
- Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- Substitute almond butter for peanut butter if preferred.
- Use maple syrup instead of honey for a vegan option.
