Ingredients
- 1 cup cooked quinoa
- 4 large lettuce leaves (romaine or butter lettuce)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup diced cucumber
- 1/4 cup diced red bell pepper
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Prepare quinoa according to package instructions and let it cool.
- In a bowl, combine quinoa, cherry tomatoes, cucumber, red bell pepper, and cilantro.
- Drizzle with olive oil and lemon juice. Season with salt and pepper.
- Toss gently to mix all ingredients.
