Ingredients
- 1 cup diced carrots
- 1 cup diced bell peppers (mixed colors)
- 1 cup chopped zucchini
- 1 cup chopped red cabbage
- 1 cup diced tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add carrots, bell peppers, zucchini, and red cabbage. Cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, add tomatoes, salt, pepper, and thyme.
- Simmer for 20 minutes until vegetables are tender.
- Serve hot.
Notes
- Adjust seasoning to taste.
- Add more broth if you prefer a thinner soup.
