Ingredients
- 4 medium beets, peeled and sliced

- 1 baguette, sliced
- 1/2 cup goat cheese
- 1/4 cup chopped walnuts
- 2 tbsp honey
- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Toss beets with olive oil, salt, and pepper.
- Roast beets for 25 minutes or until tender.
- Toast baguette slices until golden.
- Spread goat cheese on each toast.
- Top with roasted beets and walnuts.
- Drizzle with honey and garnish with thyme.
