Description

A smooth and flavorful roasted red pepper hummus perfect for dipping or spreading.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup roasted red peppers, drained
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 2 tbsp olive oil
  • 2-3 tbsp water, as needed


Instructions

  1. Combine chickpeas, roasted red peppers, tahini, lemon juice, garlic, cumin, and salt in a food processor.
  2. Blend until smooth, scraping down the sides as needed.
  3. With the processor running, slowly drizzle in olive oil.
  4. Add water, 1 tbsp at a time, until desired consistency is reached.
  5. Transfer to a bowl and serve with pita bread or vegetables.

Notes

  • For extra flavor, drizzle with olive oil and sprinkle with paprika before serving.
  • Store in an airtight container in the fridge for up to 5 days.
