Description

A delicious and easy-to-make breakfast or snack featuring roasted strawberries and whipped ricotta on toast.


Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1 cup ricotta cheese
  • 2 slices of your favorite bread, toasted
  • 1 tbsp olive oil
  • Pinch of salt


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss strawberries with honey, vanilla, and a pinch of salt. Spread on a baking sheet.
  3. Roast strawberries for 15-20 minutes until soft and juicy.
  4. While strawberries roast, whip ricotta in a bowl until smooth and creamy.
  5. Toast bread until golden and crisp.
  6. Spread whipped ricotta on toast, top with roasted strawberries, and drizzle with olive oil.
  7. Serve immediately.

Notes

  • Use fresh strawberries for the best flavor.
  • Adjust honey to taste if strawberries are very sweet or tart.
  • For extra crunch, toast bread twice.
