Description
A delicious and easy-to-make breakfast or snack featuring roasted strawberries and whipped ricotta on toast.
Ingredients
- 1 cup fresh strawberries, hulled and halved
- 1 tbsp honey
- 1/2 tsp vanilla extract
- 1 cup ricotta cheese
- 2 slices of your favorite bread, toasted
- 1 tbsp olive oil
- Pinch of salt
Instructions
- Preheat oven to 375°F (190°C).
- Toss strawberries with honey, vanilla, and a pinch of salt. Spread on a baking sheet.
- Roast strawberries for 15-20 minutes until soft and juicy.
- While strawberries roast, whip ricotta in a bowl until smooth and creamy.
- Toast bread until golden and crisp.
- Spread whipped ricotta on toast, top with roasted strawberries, and drizzle with olive oil.
- Serve immediately.
Notes
- Use fresh strawberries for the best flavor.
- Adjust honey to taste if strawberries are very sweet or tart.
- For extra crunch, toast bread twice.
