Description

A rich and flavorful roasted tomato soup infused with fresh herbs for a comforting meal.


Ingredients

  • 2 lbs ripe tomatoes, halved
  • 1 large onion, chopped
  • 4 cloves garlic, peeled
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh basil, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh oregano, chopped
  • 3 cups vegetable broth
  • 1/4 cup heavy cream (optional)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss tomatoes, onion, and garlic with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 30-35 minutes until tomatoes are soft and slightly charred.
  4. Transfer roasted vegetables to a pot, add vegetable broth and herbs.
  5. Simmer for 15 minutes.
  6. Blend until smooth using an immersion blender.
  7. Stir in heavy cream if desired and heat for 2 more minutes.
  8. Serve hot.

Notes

  • Use ripe tomatoes for the best flavor.
  • For a smoother texture, strain the soup after blending.
