Description
A hearty and comforting soup made with tender rotisserie chicken and earthy mushrooms in a rich broth.
Ingredients
- 2 cups shredded rotisserie chicken
- 1 cup sliced mushrooms
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat butter and olive oil in a pot over medium heat.
- Add diced onion and minced garlic, sauté until soft.
- Stir in sliced mushrooms and cook until they release their moisture.
- Pour in chicken broth and bring to a simmer.
- Add shredded rotisserie chicken and thyme.
- Simmer for 15 minutes.
- Stir in heavy cream and season with salt and pepper.
- Cook for 5 more minutes.
- Serve hot.

- Use a mix of mushrooms for deeper flavor.
- Store leftovers in an airtight container for up to 3 days.
