Ingredients

  • 2 cups sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 lb fresh salmon, diced
  • 1/4 cup mayonnaise
  • 2 tbsp sriracha
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 2 sheets nori, crumbled
  • 1 tbsp sesame seeds
  • 2 green onions, chopped


Instructions

  1. Cook sushi rice with water and let it cool.
  2. Mix rice vinegar, sugar, and salt, then fold into cooked rice.
  3. Preheat oven to 375°F.
  4. Mix salmon with mayonnaise and sriracha.
  5. Layer rice in a baking dish, followed by salmon mixture.
  6. Bake for 15 minutes.
  7. Top with avocado, cucumber, nori, sesame seeds, and green onions.
  8. Serve warm.
