Description
A hearty and comforting soup featuring sausage and gnocchi in a rich broth.
Ingredients
- 1 lb Italian sausage
- 1 pack (16 oz) gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can (14 oz) diced tomatoes
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Brown the sausage in a pot over medium heat.
- Add onion and garlic, cook until softened.
- Pour in chicken broth, diced tomatoes, and seasonings.
- Bring to a simmer and cook for 10 minutes.
- Add gnocchi and cook until they float to the top.
- Stir in heavy cream and simmer for 2 more minutes.
- Serve hot.
Notes
- Use fresh gnocchi for best texture.
- Adjust creaminess by adding more or less heavy cream.
- Top with grated Parmesan if desired.
