Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 cup small pasta (like ditalini or elbow)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Brown the sausage in a large pot over medium heat, breaking it into small pieces.
  2. Add the onion and garlic, cooking until softened.
  3. Pour in the diced tomatoes and chicken broth. Bring to a boil.
  4. Stir in the pasta, basil, and oregano. Simmer for 10-12 minutes until pasta is tender.
  5. Add the spinach and cook until wilted.
  6. Season with salt and pepper. Serve with Parmesan cheese on top.
