A hearty and flavorful sausage and tomato pasta soup that’s easy to make and perfect for a comforting meal.
Ingredients
- 1 lb Italian sausage, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can diced tomatoes
- 4 cups chicken broth
- 1 cup small pasta (like ditalini or elbow)
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Brown the sausage in a large pot over medium heat, breaking it into small pieces.
- Add the onion and garlic, cooking until softened.
- Pour in the diced tomatoes and chicken broth. Bring to a boil.
- Stir in the pasta, basil, and oregano. Simmer for 10-12 minutes until pasta is tender.
- Add the spinach and cook until wilted.
- Season with salt and pepper. Serve with Parmesan cheese on top.
Notes
- Use spicy sausage for extra heat.
- Substitute kale for spinach if preferred.
- Add a pinch of red pepper flakes for more spice.
