Ingredients
- 1 lb white American cheese, cubed
- 1 cup shredded Monterey Jack cheese
- 1/2 cup heavy cream
- 1/4 cup milk
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper (optional)
Instructions
- Combine cheeses, cream, and milk in a saucepan over low heat.
- Stir frequently until melted and smooth.
- Add diced tomatoes with green chilies, smoked paprika, garlic powder, onion powder, and cayenne pepper.
- Stir well and cook for 2-3 minutes until heated through.
- Transfer to a serving bowl and serve warm.

- For extra smokiness, use smoked Monterey Jack cheese.
