Description
Soft and fluffy snickerdoodle muffins with a cinnamon sugar topping.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, whisk flour, sugar, baking powder, and salt.
- In another bowl, mix milk, melted butter, egg, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fill muffin cups 2/3 full with batter.
- Mix sugar and cinnamon for topping and sprinkle over muffins.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Do not overmix the batter for soft muffins.
- Store in an airtight container for up to 3 days.
- For extra flavor, add a pinch of nutmeg to the topping.
