Description

Soft and fluffy snickerdoodle muffins with a cinnamon sugar topping.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar (for topping)
  • 1 tsp ground cinnamon (for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, melted butter, egg, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill muffin cups 2/3 full with batter.
  6. Mix sugar and cinnamon for topping and sprinkle over muffins.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool for 5 minutes before serving.

Notes

  • Do not overmix the batter for soft muffins.
  • Store in an airtight container for up to 3 days.
  • For extra flavor, add a pinch of nutmeg to the topping.
