Ingredients
- 2 medium cucumbers, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar

- 1 teaspoon sugar
- 1 clove garlic, minced
- 1 teaspoon toasted sesame seeds
- 1 green onion, thinly sliced
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and minced garlic.
- Add sliced cucumbers to the bowl and toss to coat evenly.
- Sprinkle with sesame seeds, green onion, and red pepper flakes if using.
- Chill in the refrigerator for at least 15 minutes before serving.

- Use English or Persian cucumbers for best texture.
