Ingredients

  • 1 lb chicken thighs, diced
  • 1/2 lb shrimp, peeled and deveined
  • 1 cup long-grain white rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, about 5 minutes. Remove and set aside.
  3. In the same pot, sauté onion, bell pepper, and celery for 5 minutes until softened.
  4. Add garlic, Cajun seasoning, and smoked paprika. Cook for 1 minute until fragrant.
  5. Stir in rice, diced tomatoes, and chicken broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Add shrimp and cooked chicken. Cook for 5 more minutes until shrimp turns pink.
  8. Season with salt and pepper. Serve hot.
