Spicy red pepper egg bites are a flavorful and protein-packed breakfast option. These bites are easy to make and perfect for meal prep.
Ingredients
- 6 large eggs
- 1/4 cup diced red bell pepper
- 1/4 cup shredded cheddar cheese
- 1/2 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 350°F (175°C).
- Grease a muffin tin with olive oil.
- Whisk eggs in a bowl.
- Add diced red bell pepper, cheese, red pepper flakes, salt, and black pepper to the eggs.
- Pour mixture into muffin tin compartments.
- Bake for 20-25 minutes or until set.
- Let cool before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Adjust spiciness by adding more or less red pepper flakes.
- Use silicone muffin liners for easy removal.
