Description

A bold and creamy pasta dish with a spicy vodka sauce, perfect for a flavorful dinner.


Ingredients

  • 1 lb rigatoni pasta
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 tsp red pepper flakes
  • 1/4 cup vodka
  • 1 (28 oz) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add onion and cook until soft.
  3. Stir in garlic and red pepper flakes, cooking for 1 minute.
  4. Pour in vodka and simmer for 2 minutes.
  5. Add crushed tomatoes and simmer for 10 minutes.
  6. Stir in heavy cream and Parmesan cheese.
  7. Toss cooked pasta in the sauce until well coated.
  8. Season with salt and pepper. Garnish with fresh basil before serving.

Notes

  • Adjust red pepper flakes for more or less heat.
  • For extra richness, add 1 tbsp butter at the end.
  • Freshly grated Parmesan works best.
