Description
A bold and creamy pasta dish with a spicy vodka sauce, perfect for a flavorful dinner.
Ingredients
- 1 lb rigatoni pasta
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1/2 tsp red pepper flakes
- 1/4 cup vodka
- 1 (28 oz) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook rigatoni according to package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add onion and cook until soft.
- Stir in garlic and red pepper flakes, cooking for 1 minute.
- Pour in vodka and simmer for 2 minutes.
- Add crushed tomatoes and simmer for 10 minutes.
- Stir in heavy cream and Parmesan cheese.
- Toss cooked pasta in the sauce until well coated.
- Season with salt and pepper. Garnish with fresh basil before serving.
Notes
- Adjust red pepper flakes for more or less heat.
- For extra richness, add 1 tbsp butter at the end.
- Freshly grated Parmesan works best.
