Ingredients
- 6 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin with cooking spray.
- In a bowl, whisk together eggs, milk, salt, and pepper.
- Add chopped spinach and crumbled feta to the egg mixture.
- Pour the mixture evenly into the muffin tin cups.
- Bake for 15-20 minutes or until the egg cups are set.
- Let cool slightly before serving.
Notes
- You can add diced tomatoes or bell peppers for extra flavor.
- Store leftovers in an airtight container in the fridge for up to 3 days.
