Description
A hearty and flavorful potato salad inspired by classic steakhouse sides.
Ingredients
- 2 lbs potatoes, peeled and diced
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced red onion
- 2 hard-boiled eggs, chopped
- 2 tbsp chopped fresh parsley
Instructions
- Boil potatoes until tender (10-12 minutes). Drain and cool.
- Mix mayonnaise, mustard, vinegar, sugar, salt, and pepper in a bowl.
- Combine potatoes, dressing, red onion, and eggs. Toss gently.
- Chill for at least 1 hour before serving.
- Garnish with fresh parsley.
Notes
- For creamier texture, mash some potatoes slightly.
- Add crispy bacon bits for extra flavor.
- Best served chilled.
