Ingredients
- 1 cup sweet rice flour (mochiko)
- 1/4 cup sugar
- 1 cup water
- 1 cup strawberry ice cream
- Cornstarch for dusting
Instructions
- Mix sweet rice flour, sugar, and water in a microwave-safe bowl.
- Cover with plastic wrap and microwave for 1 minute.
- Stir the mixture, then microwave for another minute.
- Dust a surface with cornstarch and roll out the mochi dough.
- Cut into circles and wrap each around a scoop of strawberry ice cream.
- Freeze for at least 2 hours before serving.

- Keep hands dusted with cornstarch to prevent sticking.
