Description

A flavorful and easy-to-make casserole combining the taste of Mexican street corn with tender chicken.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix chicken, corn, mayonnaise, sour cream, cotija cheese, cilantro, chili powder, garlic powder, salt, and black pepper.
  3. Transfer the mixture to a baking dish.
  4. Bake for 20-25 minutes until bubbly.
  5. Garnish with extra cotija cheese and cilantro before serving.
