A flavorful and easy-to-make casserole combining the taste of Mexican street corn with tender chicken.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup corn kernels
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, corn, mayonnaise, sour cream, cotija cheese, cilantro, chili powder, garlic powder, salt, and black pepper.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes until bubbly.
- Garnish with extra cotija cheese and cilantro before serving.
Notes
- Use rotisserie chicken for extra flavor.
- Replace cotija cheese with feta if unavailable.
- Spice level can be adjusted by varying the chili powder.
