Ingredients
- 4 cups corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime, juiced
- Salt and pepper to taste
- 12 small tortilla cups or lettuce cups for serving
Instructions
- Heat a skillet over medium-high heat. Add corn kernels and cook for 5 minutes until slightly charred. Let cool.
- In a bowl, mix mayonnaise, sour cream, feta cheese, cilantro, chili powder, smoked paprika, lime juice, salt, and pepper.
- Add the cooled corn to the bowl and toss to coat evenly.
- Spoon the corn salad into tortilla cups or lettuce cups.
- Serve immediately.
