Ingredients

  • 1 lb ground beef
  • 1 cup white rice
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 cup beef broth
  • 1 packet taco seasoning
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp olive oil


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it into small pieces.
  3. Stir in rice, diced tomatoes, beef broth, and taco seasoning.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
  5. Remove from heat, sprinkle with cheese, and let it melt for 2 minutes.
  6. Garnish with cilantro and serve.
