Description
A quick and nutritious one-pan meal combining sweet potatoes and black beans.
Ingredients
- 2 medium sweet potatoes, diced
- 1 can black beans, drained and rinsed
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1/4 cup chopped cilantro
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced sweet potatoes and cook for 10 minutes, stirring occasionally.
- Stir in black beans, cumin, paprika, garlic powder, salt, and pepper.
- Cook for another 5 minutes until sweet potatoes are tender.
- Garnish with chopped cilantro before serving.
Notes
- For extra flavor, add diced onions or bell peppers.
- Serve with avocado or sour cream if desired.
- Store leftovers in an airtight container for up to 3 days.
